Sugar-Free Cookies

The other day, I found the recipe for these cookies online. They had amazing reviews and I decided to make them for my family. I wasn't wrong about how easy they were to make, I had them ready in about 5-7 mins and they quickly went in the pre-heated oven. The only different thing I did from the recipes instructions was add some oats to them.

They came out of the oven and because I had added the oatmeal, they were a lot dryer than the ones in the original picture. But I was expecting that. What had me anxious was to know if the taste would be good or bad. They are after all... Sugar-Free (gulp).


So what the verdict? I thought they were ok. They taste good... but I don't know... something about real sugar sure is yummy! Will I make these again? Probably not but they were simple and easy to make and tasted pretty decent for sugar-free cookies.

Yummy Ham Soup

One of the things I really don't enjoy is cooking. I really don't have that cooking bone in me and being a mother of 5 hungry kids kinda puts me in a predicament. I am forced to cook often but there are days, when things just come together while I run around in the kitchen desperately seeking my magical fairy whom I know will rescue me from my obligation to cook.

Tonight, was no different. I had this little thing whipped up in under 30 mins and the kids just loved it. I am a lucky mom, my kids love soup but this soup especially got amazing reviews from all my 5 kids. I also thought it was pretty good :) So here is the recipe for my famous homemade soup recipe.

Ingredients:
3 Leeks (washed thoroughly and sliced)
1 bunch of Celery (washed and sliced)
1 tblsp of butter
Dash of Salt
2 cups of chicken stock
1 8oz can of cream of mushroom
1/2 cup of Velveeta Cheese
1-2 cups of cubed cooked Ham

Directions:
1. Put celery and leeks in a pan along with butter and salt. Cook for about 5 mins.
2. Transfer to a soup pot and add 2 cups of Chicken Stock, bring to a boil.
3. Stir in remaining ingredients and cook over medium heat for about several minutes.

Keeping busy with my babies

I've been keeping busy lately. As if being a mother of 5 kids with ages ranging from 5 to 13, I've become the babysitter and I am quite enjoying being a part time mom to other kids and babies. They make me nostalgic just thinking about my own babies and how they have all grown up so quickly. I have been a happy camper lately because of these little angels in my life.

On Mondays, I babysit this little guy who is 9 months old and his sister who is 5 years old. These kids are so sweet but by the time they leave, I am completely exhausted! I think I am definitely getting old... Well, maybe not, haha!

On Wednesdays, I babysit this little girl who is barely 7 months old. She is the sweetest little thing around and we lovingly call her "wednesday baby". Yes, I know... we are appalling people but she doesn't seem to mind being called that :)

New desk

I am so excited! I have a new work space area and i couldnt be any happier :) The kids of course are already taking over my space. Nono, this is my space and I am happy :) I guess, I no longer have an excuse to keep away from posting regularly. I have tons of ideas and things I want to talk about. Im looking forward to it guys!
